Macro Friendly Millionaire Shortbread
Ok a quick confession to make…
Strictly speaking, these aren’t really shortbread. They’re more of a blondie (a brownie without the chocolate).
Millionaire Blondies doesn’t quite have the same ring to it.
They are still delicious though, and one of the best macro friendly desserts/treats I’ve ever tasted.
They are packed with fibre, protein, and are relatively low in fat, at least compared to traditional millionaire shortbread!
Macro Friendly Millionaire Shortbread (makes 8 squares)
Ingredients
For the “shortbread”
One can of cannellini beans, drained and rinsed
2 medium egg whites
2 scoops Millionaire Shortbread or Vanilla Creme flavoured whey from The Protein Works
2 tbsp oats
Pinch of salt
1/4 cup Truvia Baking Blend
2 tsp vanilla essence
1 tsp baking powder
For the toppings:
6 tbsp caramel spread (I used the Bonne Maman one from Sainsburys)
100g Cadbury Dairy Milk (because “healthier” dark chocolate on these just won’t do, and isn’t always better from a calorie perspective!)
Recipe
- Preheat your oven to 160°C
- Take all of the shortbread ingredients and whizz in a food processor until well combined.
- Pour into a greaseproof paper lined baking tray (mine was approx. 9×6″).
- Bake in the oven for 20 minutes.
- Leave to cool for another 20 minutes and spread over the caramel. Place in the freezer for at least 15 minutes.
- Melt the Dairy milk in a bowl over boiling water or in the microwave. Spread on top of the chilled caramel.
- Place back in the fridge for a further 20 minutes, cut into 8 squares and scoff.
