Love a bit of BBQ pulled pork but not so keen on the high calorie and fat content?

Give my Smokey Honey BBQ Pulled Chicken a go!

The texture is still very similar and the sauce is absolutely delicious.

The chicken is poached, at first I when I thought of poached chicken, I was thinking of some sort of dry, rubbery and tasteless mess but you’re actually left with really nice textured, moist, juicy and tasty chicken.

Smokey Honey BBQ Pulled Chicken (serves 3-4)

Ingredients
600g chicken breasts
500ml chicken stock
2 dried chipotle chillies
2 red peppers
Handful cherry tomatoes
2 cloves garlic, peeled
1 tbsp soy sauce
1 tbsp honey

Recipe

  1. Take your chicken breasts, put in a saucepan and cover with chicken stock & chipotle chillies (can buy these dried from Waitrose, Tesco & Sainsburys)
  2. Bring to the boil, cover and reduce to a simmer for 10 minutes, remove the chillies then take the chicken off the heat and leave for 20 minutes.
  3. While the chicken poaches, roast or grill your red peppers and handful of cherry tomatoes. Once the skins have blackened, put in a plastic bag and leave for 10 minutes (this makes it easier to get the skins off.
  4. Remove the skins and put the tomato and pepper flesh in a food processor along with the chipotle chillies, 2 cloves of garlic, 1 tbsp soy sauce and 1 tbsp honey.
  5. Take two forks and shred the chicken breasts. Mix in with the BBQ sauce and you’re good to go.

Depending on your goals and dietary requirements, this would go well with rice, in a bun like pulled pork or with a homemade coleslaw; shredded cabbage, carrot, white onion and a little low fat mayonnaise.
