Snickers Pizookie

Pizza + cookie = pizookie

Just to clarify, this isn’t a margarita pizza with a load of smashed up choc chip cookies on top.

Instead, it’s a delicious peanut butter cookie dough crust with chocolate chips on top.

And it’s macro friendly to boot.

What more could you want?

Protein Snickers Pizookie (serves 8)

Ingredients

150g oats or oat flour
150g chickpeas
2 tbsp Truvia baking blend
50g crunchy peanut butter
3 tbsp Alpro coconut or almond milk
1 tsp vanilla essence
1 scoop chocolate or vanilla whey protein (~25g)
2 medium eggs
1/2 tsp baking powder
1 tsp plain tasting oil; vegetable, rapeseed, grapeseed or coconut would work well, NOT olive.
2 tbsp brown sugar
100g chocolate chips

Recipe

  1. Preheat your oven to 180°C or 160°C fan oven.
  2. Blend all of the above ingredients apart from the chocolate chips until smooth.
  3. Put in a greased (either with a little butter/oil or greaseproof paper) circular oven proof pan or baking tray. You could use just a normal square tin or tray but it wouldn’t look as badass.
  4. Evenly sprinkle over the chocolate chips and gently press down with the back of a spoon.
  5. Bake for 15 minutes.
  6. Keep a mop handy as you’ll be salivating… it will make your kitchen smell seriously good!!
  7. Enjoy warm on its own OR top with a scoop of ice cream plus 1 tbsp caramel sauce. I used this one: https://www.ocado.com/webshop/product/Bonne-Maman-Caramel-Spread/53278011
