Macro Friendly Millionaire Shortbread

Ok a quick confession to make…

Strictly speaking, these aren’t really shortbread. They’re more of a blondie (a brownie without the chocolate).

Millionaire Blondies doesn’t quite have the same ring to it.

They are still delicious though, and one of the best macro friendly desserts/treats I’ve ever tasted.

They are packed with fibre, protein, and are relatively low in fat, at least compared to traditional millionaire shortbread!

Macro Friendly Millionaire Shortbread (makes 8 squares)

Ingredients

For the “shortbread”
One can of cannellini beans, drained and rinsed
2 medium egg whites
2 scoops Millionaire Shortbread or Vanilla Creme flavoured whey from The Protein Works
2 tbsp oats
Pinch of salt
1/4 cup Truvia Baking Blend
2 tsp vanilla essence
1 tsp baking powder

For the toppings:
6 tbsp caramel spread (I used the Bonne Maman one from Sainsburys)
100g Cadbury Dairy Milk (because “healthier” dark chocolate on these just won’t do, and isn’t always better from a calorie perspective!)

Recipe

  1. Preheat your oven to 160°C
  2. Take all of the shortbread ingredients and whizz in a food processor until well combined.
  3. Pour into a greaseproof paper lined baking tray (mine was approx. 9×6″).
  4. Bake in the oven for 20 minutes.
  5. Leave to cool for another 20 minutes and spread over the caramel. Place in the freezer for at least 15 minutes.
  6. Melt the Dairy milk in a bowl over boiling water or in the microwave. Spread on top of the chilled caramel.
  7. Place back in the fridge for a further 20 minutes, cut into 8 squares and scoff.
