Banoffee Pie

Whilst “healthier” alternatives of desserts will likely never taste better or be as good as the calorie laden and high fat versions, I think it’s great to have some high protein and low fat dessert recipes in your arsenal that will easily fit your macros!

This bad boy banoffee pie was absolutely delicious and I couldn’t think of a better way to round off my meal with one of these and still stay within my calorie, carb, protein and fat goals for the day.

JB’s Macro Friendly Banoffee Pie (makes 2)

Ingredients

2 small bananas
1 tub (~300g) quark cheese
1 tsp vanilla essence
1/2 sachet of no added sugar butterscotch Angel Delight
1 tsp Truvia/Stevia sweetener
2 Sainsbury’s lighter ginger snap biscuits
OPTIONAL: 1 ~20g square of dark chocolate, grated to garnish

Recipe

  1. Slice one of the bananas thinly, put in a bowl and mix in the Stevia/Truvia sweetener. Microwave for 1-2 mins until the banana is gooey.
  2. Crush your ginger snap biscuits and put them at the bottom of your banoffee receptacle of choice. JB’s Top Tip- do not use a martini glass. A) because it looks really poncey and B) because you can’t get the ginger snap biscuits out of the little gap at the bottom. I learned the hard way.
  3. In a blender, whizz up the quark, Angel Delight, vanilla essence and the remaining banana.
  4. Get building! Put the gooey banana “toffee” on top of the biscuit base and then finish off with the quark-banana-butterscotch topping.
  5. If you like, you can garnish with a grated dark chocolate square.
  6. Demolish
